Chipotle Chicken Tacos

DIRECTIONS

  1. Heat EVOO in a large skillet on medium-high heat.

  2. Roast chicken in pan (approximately twenty-five minutes)

  3. Cook bacon in oven until desired crispness is reached

  4. Assemble tacos, starting with bib lettuce, then chicken, avocado, chipotle lemonaise, bacon crumbles, and one jalapeño slice per “taco.’'

  5. Serve and enjoy! 

INGREDIENTS

  • 2 Chicken breasts

  • 8 Bib or romaine lettuce leaves

  • 2-3 Slices of bacon, cooked and chopped

  • 1 Avocado

  • 2 limes, halved

  • 2 Tablespoons chipotle Lemonaise
