DIRECTIONS
Heat EVOO over medium heat.
Sauté peppers until slightly tender, then add in mushrooms.
Beat eggs in a bowl until well blended.
Pour eggs into pan until they start to set (about 2-3 minutes).
Fold over, top with hot sauce if preferred, to taste.

2-3 Large eggs
2 Diced tomatoes
1 Diced green peppers
1/2 Cup mushrooms
2 Tablespoons extra virgin olive oil
Salt and Pepper to taste
