DIRECTIONS

  1. Heat EVOO over medium heat.

  2. Sauté peppers until slightly tender, then add in mushrooms.

  3. Beat eggs in a bowl until well blended.

  4. Pour eggs into pan until they start to set (about 2-3 minutes).

  5. Fold over, top with hot sauce if preferred, to taste.

  • 2-3 Large eggs

  • 2 Diced tomatoes

  • 1 Diced green peppers

  • 1/2 Cup mushrooms

  • 2 Tablespoons extra virgin olive oil

  • Salt and Pepper to taste
